Coffee Growing Regions
South America
South America is one of the world’s most important coffee producing regions. Countries such as Colombia, Brazil and Peru produce a wide range of coffees, from smooth and balanced everyday blends to bright, fruity single origins. Colombian coffee is particularly well regarded for its clean flavour and mild acidity. Brazilian coffee tends to be nutty and chocolatey with low acidity, making it a popular choice for blends.
East Africa
East Africa produces some of the world’s most distinctive and complex coffees. Ethiopia, widely considered the birthplace of coffee, produces beans with floral, fruity and aromatic characteristics. Kenyan coffee is known for its bright acidity and berry-like flavours. These coffees are often enjoyed as single origins by those who appreciate more complex flavour profiles.
Central America
Countries such as Guatemala, Honduras and Costa Rica produce coffees with a wide range of flavour profiles. Central American coffees often feature balanced acidity, chocolate notes and a smooth body, making them versatile choices for both espresso and filter brewing.
Altitude and Flavour
Altitude plays a significant role in coffee flavour. Coffee grown at higher altitudes tends to develop more slowly, resulting in denser beans with more complex flavour. Higher altitude coffees often have brighter acidity and more nuanced taste profiles. Lower altitude coffees tend to be milder and more straightforward in flavour.
Processing Methods
After harvesting, coffee cherries are processed to remove the fruit and prepare the beans for roasting. The main processing methods are:
- Washed (wet process): The fruit is removed before drying, producing clean, bright flavours with clear acidity.
- Natural (dry process): The whole cherry is dried with the fruit intact, producing sweeter, fruitier flavours with more body.
- Honey process: A middle ground between washed and natural, retaining some of the fruit during drying for a balanced sweetness.
